Buy for the day you think you'll have. Perishables spoil overnight until you own the fridge, and ingredient prices drift day to day.

Reinvest profits: stand to trailer to truck to a retired school bus with a pizza oven, plus kitchen upgrades that visibly change how your menu sells.
